Pork and Soba Noodles

Makes 6 Servings

2 pounds pork shoulder, whole
1 onion, quartered
1 12 oz can mushrooms (optional)
1/4 cup soy sauce
4 Tbsp sake or white wine
2 Tbsp brown sugar
2 Tbsp fish sauce or oyster sauce
2 Tbsp chili garlic paste
1 Tbs sesame oil
2 tsp garlic, minced
1 cup chicken broth
1 cup water
1 9oz package soba or buckwheat noodles

Step 1: Toss everything in Instant Pot except Noodles
Add all ingredients except the noodles into the Instant Pot and stir well. Cook at high pressure for 90 minutes, and let sit for 15 minutes before releasing pressure.

Step 2: Shred Meat
Remove meat from Instant Pot and shred, discarding bits of fat that didn't render into the broth, and return meat back to Instant Pot.

Step 3: Cook Noodles
Cook noodles per package directions.

Step 4: Plate and Serve
Combine noodles and broth in bowls. Save leftovers separately to keep the structure of the noodles intact.
